Mexican Casserole With What You Have On Hand

Just like the stir-fry I wrote about, here is a Mexican casserole that you can make with whatever you have on hand. This is a bit more challenging because you might not have as many of these items in your cupboard as ya do for the stir fry, but who knows??? Now you can get real creative with this recipe. This is an excellent way to learn how to cook. You will learn what food items go well together by creating the dishes yourself. If you're already a good cook, this is a fun way to create new recipes.


Choose Your Starch

First of all, you need to decide what kind of starch you want to use. You are going to have two layers of starch. You can use the same starch in both layers or you can use two different starches. For instance, your bottom layer could be macaroni and your top layer could be nachos! When using chips, use enough to cover the bottom of the pan and then make a second layer. The other starches have the amounts to use.

Lasagna 6 noodles

Ritz Cracker Crumbs

1 cup of Bisquick (Mix with 4 eggs and 2 cups of milk, salt and pepper) (I pour this on top of everything instead of making layers)

Elbow Macaroni - 1 cup uncooked

Rice (4 cups cooked)

Polenta or Mush

Canned Tamales

Choose Your Meat

Again, you can mix and match the meat. You want about 2 pounds of meat. If you use seafood, it would be less.

Sweet Sausage

Chorizo

Shredded or cubed beef

Shredded or cubed pork

Hamburger

Shrimp

Tuna

Scallops

Crab Turkey

Choose Your Veggies

Veggies - You can use between 1 and 3 cups of veggies, depending on how much you like veggies. Mix and match. Below, I have suggested amounts for certain ones, but there's no hard core rule here. Like I said....be creative.

Garlic (1 - 2 T. sauted, depending on how much you like garlic)

Onion (1/4 cup)

Green Olives (1/4 c.)

Black Olives (1/4 c.)

Lima Beans (1/2 c. - 1 c.)

Broccoli (1/2 - 2 cups)

Tomatoes with green chilis rotel (1 can)

Green Chilis (canned) (1 small can)

Jalapeno Peppers (canned) (1 small can)

Green peppers (fresh) (1/4 - 1/2 cup)

Hot peppers (fresh) (1/4 cup)

Zucchini (1/2 to 1 cup)

Eggplant (1/2 to 1 cup)

corn (1/2 to 1 1/2 cups)

Fresh chopped tomatoes (1 - 2 cups)

Refried Beans (1 - 2 cups)

Canned beans (black beans, kidney beans, etc.) (About 1 cup)

Baked beans (about 1 cup)

Celery (1/4 - 1/2 cup)

Choose Your Cheeses

Cheese - Use about 2 cups of shredded cheese. I would probably use even more, but I am like a little rat. Feel free to mix or match.

Monterrey Jack

Cheddar

Queso Blanco

American

Velveeta

Cream Cheese

Make Your Sauce

Sauce - You need about 2 cups of sauce to put on top. You can mix and match any of these ingredients to come up with a great sauce. Also, feel free to add cheese to any of these sauces. And I don't know if I'm allowed to say this, but I use Campbell's Soups. I wouldn't want to chance ruining a recipe by using an "off" brand.

Sour Cream

Cream of mushroom Soup

Cream of Chicken Soup

Cream of Celery Soup

Cheese Soup

Mayonaise

Taco Sauce

Enchilada sauce

Salsa

Choose Your Spices

You can add whatever spices you like to the sauce mixture. I was a little conservative with the amounts so feel free to add more of something you really like.

Chili powder - 2 T

Cumin 1/4 t.

Onion Powder 1/4 t.

Cinnamon 1/4 t.

Garlic Powder 1/4 t.

Oregano 1/4 t.

Thyme 1/4 t.

Mint 1/4 t.

Hot pepper flakes - to taste

Salt - to taste

Pepper - to taste

Now you should have everything ready. Your meat is cooked. Your starch is prepared. Veggies are chopped. It's time to have fun!

Take a 9 X 12" pan and spray it with cooking spray. Now line the pan with half of the starch you chose. Next, add your meat followed by another layer of starch. Add your veggies, sauce and sprinkle with cheese. Bake at 350 degrees for approximately 1 hour. It's that easy. If you have a versatile recipe like this, let me know!
