If you are looking for authenticity, my family came here from Italy and this is the way we've made homemade egg noodles for years. Spaghetti Sauce

It's really easy to do. All you need to do is:
Slightly beat
3 Whole Eggs
1 Egg White
Then Beat in:
3 T. cold water
1 t. salt
Stir in:
2 Cups of flour
Now you want to get the dough nice and smooth. I need it a little, but you don't want to knead it too much. Actually the more you knead it, the more it will taste like store bought instead of homemade egg noodles.
For this homemade noodles recipe, I take the dough and divide it into three parts. Roll out each piece as thin as possible on a lightly floured board or table. Toll up the dough as you would for a jelly roll. With a thin sharp knife, cut into strips of desired width. Shake out the strips and you're done!
If you want to make homemade noodles on the pasta machine, just flatten out pieces of the dough and run them through the machine to get them paper thin instead of using a rolling pin. Then you can use the width you like on the machine. I like to cut them myself, because remember, the more processed you do it, the more it will taste like store bought instead of homemade.
The only time I use the pasta maker is when I want Angel Hair because it's really hard to cut them that small.
If you want, you can use your homemade noodles recipe make lasagna noodles. You don't have to do the "jelly roll" thing; just cut them into the shape of a lasagna noodle.
You can either dry your noodles or you can freeze them. Myself, I like to use them right away. I think they are best when they are freshly made and thrown in the boiling water.
