When it comes to food Mediterranean recipe choices boast some of the best. The Mediterranean - from the shores of Spain, to France, Italy, Greece, Turkey, Syria, Lebanon, Israel, and into Africa to Egypt, Libya, Tunisia, Algeria and Morocco. The islands of Malta and Cyprus are truly Mediterranean, encircled by the sea. In many ways these fifteen countries are completely different except for one common link. The food! Mediterranean food is one of my favorites. I have also heard from many travelers that their favorite dishes came from the Mediterranean. Most of my experience in making Mediterranean food came from working for a Greek restauranteer. I have been preparing Mediterranian food recipes ever since.

Any Mediterranean recipe will require you to stock up on lots of veggies including artichokes, eggplant, fava beans, fennel, mushrooms, okra, onion, peppers, radicchio, radishes, spinach, grape leaves and zucchini.P>The fruits are dates, figs, melons, peaches, nectarines and oranges. You won't need sour cream, but will use plain yogurt instead and the range of cheeses is diverse.

Cheese is made from cow's, goat's, sheep's and, in the case of mozzarella, water buffalo's milk,. Cream cheese is also common to many countries, varying a little according to the milk and the method used for preparing it.

Of course the food in a Mediterranean recipe would include plenty of seafood fresh from the Mediterranean sea: Red Mullet, Squid, Salt Cod, Crab, Mussels and Shrimp.

Other foods that come from the Mediterranean are grains such as bulger, couscous and rice; beans such as chickpeas, lentils and navy beans, nuts such as almonds, pin nuts, pistachios and walnuts and pasta.

Tasty Mediterranean food requires many herbs and spices which are used sparingly to enhance the wonderful fresh food flavors. Spices are cardamom, chiles, cinnamon, coriander seeds, cumin seeds, mace, nutmeg, pepper and saffron. Herbs include bay, bouquet garni, chervil, chives, cilantro, dill, marjoram, mint, parsley, rosemary, sage, tarragon and thyme. Other flavorings put in the food of a Mediterranean recipe would be lemons and limes, capers, garlic, harissa (a fiery hot paste), oranges, preserved lemons and limes, rose water, tahini (a sesame seed paste), and tomato paste. And what kind of oil do you think is used in tasty Mediterranean food. Olive oil, of course.

Avgolmono is the most popular of Greek Soups. The name means egg and lemon, the two important ingredients, which produce a light nourishing soup. Orzo is a Greek pasta like rice, but you can use any small shape. I have also seen rice used in this soup.

Pistou is a delicious vegetable soup from the south of France, served with a sun-dried tomato pesto and fresh Parmesan cheese. Spicy pumpkin soup is "all the rage" these days as seen on many restaurant menus. It is best eaten in the fall, being it is a very rich soup. Pumpkin soup is popular all over the Mediterranean, and it's an important ingredient in Middle Eastern cooking, by which soup is actually inspired. Finger and cumin give the soup its spicy flavor.
