Authentic Indian Recipes
Authentic Indian recipes consist of lots of rice and veggies. As far as meat goes, chicken in India is very popular. You may have heard os Balti Chicken (an Indian stir fry), Chicken Curry or Classic Chicken Tandori (recipe below). Indians know
how to cook lamb.
You will often find lamb marinated in yogurt and spices. Yogurt marinade is comparable to our using buttermilk as a marinade. (If you have never marinated your chicken in buttermilk, definitely give it a try. You will be pleasantly surprised.) And the same goes for yogurt. Another way to marinate using authentic Indian recipes is to use papaya which is not totally ripe. Ripe papaya is too sweet. If you see an ingredient paw paw, that is papaya. One of the goals of this website will be to make sure you know what all the ingredients are in these ethnic recipes. There is no point in creating a recipe if you do not have all of the ingredients. I found it difficult to have everything when I didn't know what half of the items listed in a recipe were. Many times these ingredients are just everyday items, but they are written in another language. I once needed an item called bakdownas. I even googled it and couldn't find it. Being obsessed, I wouldn't let it go. When I finally found the word, bakdownas, I found it is simply parsley written in Lebanese. Therefore, as I work on this site and offer recipes, the ingredients will be clear. If they are "hard to find" ingredients, I will eventually offer resources of where you can buy these items.
Back to authentic Indian Recipes, you'll see seafood used in fairly fiery mixtures or as part of a blend of othr aromatic ingredients such as lime, coriander, coconut and chillies. Meat and seafood alike are often made into kebobs or a chicken or lamb pullao. This is a one dish casserole including basmati rice.
Basmati rice is wonderful. If you haven't tried it yet, be sure to get some the next time you see it. To me it tastes like buttered popcorn, believe it or not! Many authentic Indian recipes include rice as the main course instead of meat or seafood.
The main fruits and veggies you will see are eggplant, peppers, chilies, corn, tomatoes, onions, okra, carrots, cucumbers, mangos, papayas.
And don't forget to put the veggies inside of a "pita-like" shell for "good eats!" It is so simple. Take whole wheat flour and water. Mix water in the flour until you have dough consistency. Flatten this out and fry it in oil. These are used as we use bread.
Yogurt is used in the same manner that we use sour cream, or as I said earlier, buttermilk. It's easy to make your own
homemade yogurt.
Many of the herbs and spices used in Authentic Indian recipes consist mainly of corriander, saffron, mint, cardamom, tumeric, cumin, curry, aniseed, cinnamon, mace, ginger, star anise, nutmeg, mustard seeds (black), tamarind and cloves.
Indian Rice Curry Recipe
One of the simplest of the authentic Indian recipes is the Indian rice curry recipe. This preparation will help you to prepare it in the Indian way leaving a fresh mouthwatering aroma in your entire house. Let’s get started with the Indian rice curry recipe.
Ingredients for the Indian Rice Curry Recipe,/B>
2 tsp. of olive oil
1 small onion, properly minced
1/4 cup tart apples, finely chopped
2 tsp. of curry powder
1/8 tsp. of cayenne pepper
4 cups evenly cooked basamati rice
2 cups of canned chickpeas, properly drained
1 Tbs. of fresh lemon juice
Some fresh ground pepper
To start with the preparation of this dish, pour oil in a heavy skillet and set stove to a medium heat. When the oil is properly heated add the onion and sauté for 3 minutes. After this add the apple and sauté for 3 more minutes. Further add the curry powder and cayenne to coat the apple and onion. Add the cooked rice and chickpeas to this mixture and cook through until rice and beans are hot. Once the dish is ready sprinkle with lemon juice and serve hot to be cherished by your entire family.
Another of the simplest of the authentic Indian recipes is the Indian vegetable curry recipe which can be cooked in the crock pot or slow cooker. This takes around 7 hours for preparation. Lets start with the ingredients which are easily available.
Ingredients for Indian Vegetable Curry Recipe
3 potatoes, finely chopped
1 cauliflower, also finely chopped
1 1/2 of cups green peas
3 tomatoes, also finely chopped
3/4 tsp of turmeric powder
1/2 tsp of chili powder
1 1/2 tsp of cumin
1 tsp of curry
1 cup of water
PREPARATION:
The preparation of the Indian vegetable curry recipe is fairly easy. What you need to do is to place all ingredients in a crock pot or slow cooker. Cook on low temperature for 5 to 6 hours. When the food is evenly cooked serve hot. You can even garnish it with finely chopped salad.
Tandori Chicken
Using Chicken in India is great in this Tandori chicken recipe which is easy to make. Take a whole chicken, cut it up, skin it, and season it with salt. Take a cup of yogurt and add spices. Marinate the chicken overnight. Your chicken will be so tender from this marinade. Grill it the next day. I like to dot my chicken with butter as it is grilling. Serve with a garnish of lemons and scallions.

1 Whole Chicken
1 Cup of Yogurt
1T Butter (melted)
1T Lemon Juice
1T Coriander
1T Cumin
1T Chili Powder
1T ground garlic and ground ginger
1 1/2 t. Garam Masala
1 1/2 t. Dry Mustard
